Description

A traditional Mexican breakfast made of tortilla chips, stewed in roasted tomatillo salsa and topped with fried eggs. The perfect breakfast and hangover cure.


Ingredients

Scale
  • 4 cups roasted salsa verde (I recommend making your own but if you're doing store bought, use Herdez )
  • 4 handfuls tortilla chips
  • 46 eggs (fried or scrambled )

Toppings (Optional)

  • sour cream
  • cilantro
  • avocado
  • diced onion
  • queso fresco

Instructions

  1. Heat the salsa in a large skillet over medium heat and bring to a simmer.
  2. Add the chips one handful at a time while stirring into the salsa. The salsa should cover the chips. Stir and simmer for 5-7 minutes until the chips begin to soften. Remove from the heat.
  3. In a separate skillet, cook your eggs. If doing scrambled, I recommend adding them directly into the chips. If fried, plate the chips and top with the eggs. Add any other toppings you like and enjoy!
