Easy One Pot Grandma Soup

This quick and comforting soup is an old family tradition because of it's simple yet delicious flavors from dried mint, caramelized onions and rich broth.
Ingredients
  • 4 tbsp butter
  • 2 white onions, sliced into thin strips
  • 3 tbsp dried mint
  • 1 tsp red pepper flakes (optional)
  • 2 16oz cans diced tomatoes
  • 8 cups veg broth
  • 2 cups water
  • ½ lb angel hair pasta (see notes)
Directions
  1. Melt the butter in a large pot over medium heat. Add in the onions and saute for at least 10 minutes until they begin to brown and caramelize.
  2. Add in the dried mint and red pepper flakes and cook for another 2 minutes until they're full saturated in the butter.
  3. Add the diced tomatoes and toss. Then pour in the vegetable broth and water. Turn up the heat and bring the broth to a boil. When the water is at a rolling boil, add in the noodles and cook until al dente. For angel hair this only takes a few minutes.
Notes
**These noodles thicken significantly in the broth over time if you keep this as leftovers, you may need to add more water as the week goes on. Alternatively, you could cook the noodles in a separate pan and merely simmer the soup for 20 minutes and store the noodles separately. Then when you are ready to serve pour the broth over a scoop of noodles.
