Easy Tofu Fajita Tacos

Today I bring you one of the easiest weeknight meals I have, Fajita Tacos. I’m sure most of you out there had a crazy weekend, spending time with family, cooking and running around. After a super busy weekend, I like to set myself up to have a chill week in the kitchen and this recipe is perfect for that. It takes exactly an hour to prep and cook, and most of that is just straight bake time so it’s minimal effort. You can even cut and marinade the veggies and tofu ahead of time and keep them in a ziploc bag or container in your fridge. When the day comes to cook, you simple pour it into a pan, put it in the oven and boom! Dinner!

I was inspired to make this recipe after watching one of those Buzzfeed videos. The video I saw was chicken fajitas so I took the opportunity to make these vegetarian and it worked perfectly. The marinade here is spicy, bold and you can whip it up in seconds. I was also drawn to the fact that it is made with spices that pretty much everyone has in their pantry or can get very easily.
Now, this specific recipe uses tofu but I’ve also made it with cauliflower and it came out great! I try to stick with the tofu because it is a protein source but feel free to modify it as you wish. You can also make the recipe spicier by adding more cayenne pepper or an extra jalapeno pepper.
For toppings, I usually stick with traditional taco toppings or whatever else I have in the house. You can use tomatoes, avocado, green salsa or whatever else you have on hand. I’ve used chipotle mayo, pico de gallo or avocado ranch as the sauce as well, really anything works great with them! These tacos are also great to make and keep in the house for the week as well! The cooked veggies will keep for about 4 days in your fridge and they reheat very well.

Description

Easy, bold, spicy and delicious Tofu Fajita Tacos. The perfect make-ahead meal for busy weeks.


Ingredients

Scale
  • 2 Poblano peppers, sliced into strips
  • 1 red pepper, sliced into strips
  • 2 jalapeno pepper, seeded and diced
  • 1 white onion, sliced thin
  • 1 8oz block extra firm tofu, pressed and cut into 1/2 inch squares**(see notes)
  • 2 tbs corn starch
  • 2 tbs chili powder
  • 1 tbs cumin
  • 1 tbs garlic powder
  • 2 tsp cayenne pepper
  • 1 tsp each of salt and pepper
  • 1/2 cup olive oil
  • Optional Toppings
  • corn or flour tortillas
  • diced Roma tomatoes
  • salsa Verde
  • avocado
  • cheese
  • sour cream
  • cilantro

Instructions

  1. Preheat your oven to 350 degrees. Place the cut veggies and tofu into a large pan.
  2. In a small bowl, whisk together the corn starch, garlic powder, cayenne pepper, chili powder, cumin, olive oil and salt and pepper. When the marinade is fully mixed together, pour it over the veggies and toss until they’re fully coated.
  3. Bake for 45 minutes until the peppers and onions are soft. Serve on top of either corn or flour tortillas with toppings of your choice!

Notes

*Marinading the veggies can be done days before hand.
**Instead of tofu, you can also use cauliflower cut into small florets
